Sticky rice with mango recipe. ( Khao niaow mamuang )


Craving for sticky rice with mango. Remembering my years living in Thailand.


Recipe from epicurious :

INGREDIENTS

  • 1 1/2 cups glutinous (sweet) rice
  • 1 1/3 cups well-stirred canned unsweetened coconut milk
  • 1/3 cup plus 3 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 tablespoon sesame seeds, toasted lightly
  • 1 large mango, peeled, pitted, and cut into thin slices (at least 24)

PREPARATION

In a bowl wash rice well in several changes of cold water until water is clear. Soak rice in cold water to cover overnight.
Drain rice well in a sieve. Cover and steam for about 20 min or until the grains of rice are tender.
While rice is cooking, in a small saucepan bring 1 cup coconut milk to a boil with 1/3 cup sugar and salt, stirring until sugar is dissolved, and remove from heat. Keep mixture warm.
Transfer cooked rice to a bowl and stir in coconut-milk mixture. Let rice stand, covered, 30 minutes, or until coconut-milk mixture is absorbed. Rice may be prepared up to this point 2 hours ahead and kept covered at room temperature.
While rice is standing, in cleaned small pan slowly boil remaining 1/3 cup coconut milk with remaining 3 tablespoons sugar, stirring occasionally, 1 minute. Transfer sauce to a small bowl and chill until cool and thickened slightly.
To serve, mold 1/4 cup servings of sticky rice on dessert plates. Drizzle desserts with sauce and sprinkle with sesame seeds. Divide mango slices among plates.

Pisang goreng or banana spring roll ?

Banana springroll to bring to a ladies luncheon. Springroll skin filled with banana, chocolate haselslag and grated cheese then fry. Enjoy with tea.

Sate Ayam. Indonesian chicken satay recipe.

Ing : 
500 gr boneless, skinless chicken breast, cut into small pieces.
1/3 cup kecap manis ( sweet soy sauce )
1 tbsp kecap asin ( soy sauce )
1 tbsp corriander powder
1 tbsp garlic powder

Mix well all the ingredients and marinate for at least 1 hour or over night in the fridge.

Put the cut chicken into skewers, brush with melted butter before you grill.

Served with white rice or rice cake, pikcle and peanut sauce. 

Silver cutlery

Waiting for the boiling water done. The best way to clean the silver cutlery is using baking soda, vinegar, boiling water and aluminium dish to place the silver things. Try not to overlap any of the silver.

Pudding Tape Hijau recipe

Pudding tape hijau ( fermented glutinous rice pudding ) is really refreshing during  a hot day like now.

Ing :

2 packs agar-agar powder ( green or white color )
1600 ml coconut milk
sugar to taste
400 gr green tapai ketan ( fermented glutinous rice )
a pinch of salt

Method :

Put agar-agar, sugar, salt and coconut milk in a pan, mix well and bring it to boil. If using the white agar-agar, you may add a drop of pandan paste. Off the heat, add tapai ketan mix well. Pour into small glasses. Wait until room temperature then put in the fridge.

Serve chilled with chilled milk sauce.

Milk sauce :
500 ml milk and 1 tbsp corn flour, 5 tbsp sugar mix well and bring to boil.

Morning tea

Had some lovely friends joined me for morning tea.

Ontbijtkoek with vanilla butter, cheese scones with strawberry jam, arem-arem, bolu tape, pisang goreng, cube cheese ( grape, raspberry, cut cheese on a cute skewer ) and risoles are served.

East meets West. Crème brûlée recipe.

Crème brûlée rasa tape. Made this crème brûlée with fermented cassava. Too good..😋

Ing : 4 eggs
200 ml cream
300 ml coconut milk
sugar to your taste
tapai (fermented cassava) 150 gr, take the string out.

Method : bring to boil cream and coconut milk, set aside.
Beat sugar and eggs till pale and foamy then add cassava, mix it, then add the coconut mixture, mix well. Bake in the preheat oven (350 F) using a water bath method for 40 min.
Remove from oven and cool to room temperature.

Preheat oven to broil. Sprinkle sugar over the custard evenly then place under broiler till sugar melts about 2 mins. Watch carefully so as not to burn. Remove from heat. You may using a torch to caramelized the sugar.

Served chilled.

Kaastengels recipe

Kaastengels :

Ing : 250 gr butter
175 gr margarine
3 egg yolks
300 gr old cheese (grated)
250 gr self raising flour
25 milk powder

Method :
Mix butter, margarine and salt evenly
Add eggs into the mix
Add flour and milk powder then continue mix till well with slow speed.
Add grated cheese, continue mix it until it form a dough
Shape the dough into small pieces, brush with egg yolk and top it up with grated cheese
Bake for 15 - 20 mins in the preheat oven 350 F.

My signature bolu tape (fermented cassava cake), es dawet (Javanese cold beverage), and pisang goreng (banana fritters) for dessert

My signature bolu tape ( fermented cassava cake ) recipe

Ing : 
500 gr tapai ( fermented cassava ), take the string out then mashed.
5 tbsp sweetened condensed milk 
8 eggs
270 gr sugar
1/2 tsp vanilla 
225 gr butter, melted
150 gr cheddar cheese ( grated )
260 gr all purpose flour 
2 tsp baking powder

Method :
Preheat the oven to 350F, butter a cake pan. Beat eggs and sugar in a large bowl with a mixer on medium high speed about 3 minutes, reduce the mixer speed to medium, beat in flour and baking powder little by little for 2 min. Add tapai and other rest of the ingredients, mix well with the scrapper. Pour the batter into a prepared pan and bake for 45 min.

Bolu keju. Indonesian cheese cake recipe

My signature bolu keju for my husband's birthday cake.

Ing : 300 gr butter
200 gr sugar
1 tsp vanilla 
8 eggs
250 gr cheddar cheese ( grated )
200 gr flour
1 tsp baking powder

for cheese cream :
Mix well butter, vanilla, icing sugar and philadelphia cheese cream

Method :
Preheat oven to 350F. Grease and flour two 9 inch round cake pans or one 9x13 inch pan.
Beat butter, Sugar and vanilla with electric beaters until light and creamy. Add eggs gradually, beating thoroughly after each addition.
Using a rubber spatula fold in sifted flour and baking powder and cheese. Mix well.
Spoon the batter into prepared pans. Bake for 45 mins or until skewer comes out clean when inserted in centre of cake.
Stand cakes in pan 10 mins before turning onto wire rack to cool.
Sandwich cakes together with cheese cream. Spread cheese cream on the top and sides of the cake. Garnish with grated cheddar cheese.

Poffertjes recipe

Poffertjes to enjoy with tea this afternoon at my home today.

Ing :
1 2/3 cups self raising flour
2 tbsp caster sugar
1 tsp vanilla essence
1 egg
1 1/2 cups milk

Method :
Sift flour into a bowl. Stir in sugar. Make a well in the centre. Whisk vanilla, egg and milk together in a jug. Add to well. Beat together for 2 mins until smooth and fluffy. Cover and stand for 20 mins.

Heat a large frypan ( if you don't have a poffertjes pan ) over medium heat. Spray with cooking oil. Drop 1/2 tbsp of batter into pan. Repeat to make 8 mini pancakes. Cook for 2 mins or until bubbles start to form on surface. Turn over. Cook for 1 min or until golden and cooked through. Cool on wire rack.

Repeat with remaining mixture, greasing pan between additions.
Serve warmed with butter and icing sugar.
